Description
Clover Bars are festive shortbread bars with a green coconut-pistachio filling and glaze ; perfect for St. Patrick’s Day celebrations.
Ingredients
For the shortbread base:
- 2 cups all-purpose flour
- 1/2 cup powdered sugar
- 1/2 teaspoon salt
- 1 cup cold unsalted butter, cubed
For the clover filling:
- 4 large eggs
- 1 1/2 cups granulated sugar
- 1/4 cup all-purpose flour
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon almond extract
- Green food coloring
- 1 cup sweetened shredded coconut
- 1/2 cup chopped pistachios
For the glaze:
- 1 1/2 cups powdered sugar
- 3–4 tablespoons milk or cream
- 1/2 teaspoon vanilla extract
- Green food coloring
Instructions
1. Preheat oven to 350°F and line a 9×13 pan with parchment paper.
2. Pulse flour, powdered sugar, and salt. Add butter and pulse to coarse crumbs. Press into pan.
3. Bake shortbread base for 20 minutes until golden at edges.
4. Whisk eggs and sugar, add flour, extracts, and green coloring.
5. Fold in coconut and pistachios. Spread over hot base.
6. Bake another 25 minutes until set. Cool completely.
7. Whisk glaze ingredients. Spread over cooled bars. Let set 10 minutes before cutting.
Notes
- Substitute almond flour for added protein.
- Use coconut sugar to reduce glycemic load.
- Swap eggs for flax eggs for vegan version.
- Prepare shortbread base ahead up to 2 days.
- Freeze unglazed bars and glaze after thawing.
