Description

These soft, tangy Green Velvet Cookies put a St. Patrick’s Day twist on classic red velvet. Finished with a rich cream cheese glaze, they’re festive, flavorful, and surprisingly simple.

For the Cookies:

  • 2¼ cups all-purpose flour (or 1:1 gluten-free blend)
  • 2 tbsp unsweetened cocoa powder
  • 1 tsp baking soda
  • ½ tsp salt
  • 1 cup granulated sugar
  • ½ cup packed light brown sugar
  • ½ cup unsalted butter, softened
  • 2 large eggs, room temperature
  • 1 cup buttermilk (or 1 cup milk + 1 tbsp vinegar)
  • 2 tbsp green liquid food coloring (or 1 tbsp gel)
  • 2 tsp vanilla extract
  • 1 tsp white vinegar

For the Cream Cheese Glaze:

  • 4 oz cream cheese, softened
  • 2 cups powdered sugar
  • 34 tbsp milk
  • 1 tsp vanilla extract
  • Green sprinkles or edible glitter (optional)

Instructions

1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.

2. Whisk together flour, cocoa, baking soda, and salt.

3. In a separate bowl, cream butter with both sugars until fluffy (3–4 min).

4. Beat in eggs one at a time, then add vanilla, food coloring, and vinegar.

5. Alternately add flour mixture and buttermilk to the wet mixture. Mix just until combined.

6. Drop tablespoons of dough onto sheets, 2 inches apart.

7. Bake 12–15 minutes, until edges are set and centers are slightly soft.

8. Cool 5 min on sheets, then transfer to wire racks.

9. Whisk glaze ingredients until smooth. Drizzle over cooled cookies.

10. Add sprinkles or glitter if using.

Notes

  • Use gel food coloring for richer color with less quantity.
  • Don’t overbake, cookies continue cooking on the pan after removal.
  • For vegan version: use flax eggs, dairy-free butter, and vegan cream cheese.
  • Dough freezes well for up to 2 months. Scoop before freezing.
  • Store cooled cookies with parchment between layers.
