Description
This Honey BBQ Chicken Rice is a one-skillet dinner packed with sweet, smoky, and tangy flavor. Made with pantry staples and tender chicken, it’s a quick weeknight dinner everyone loves.
Ingredients
For the Chicken:
- 1.5 lbs boneless, skinless chicken thighs (or breasts)
- 2 tablespoons olive oil
- 1 teaspoon smoked paprika
- 1 teaspoon garlic powder
- 1/2 teaspoon onion powder
- Salt and pepper to taste
Honey BBQ Sauce:
- 1/3 cup honey
- 1/4 cup BBQ sauce
- 2 tablespoons soy sauce
- 1 tablespoon apple cider vinegar
- 1 teaspoon Dijon mustard
Rice Base:
- 1 1/2 cups jasmine rice
- 2 1/4 cups chicken broth
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 red bell pepper, chopped
- 1 cup frozen corn kernels
- 2 green onions, sliced (garnish)
Instructions
1. In a bowl, whisk honey, BBQ sauce, soy sauce, vinegar, and mustard. Set aside half for glazing.
2. Season chicken with paprika, garlic powder, onion powder, salt, and pepper.
3. Heat oil in skillet over medium-high. Sear chicken 4–5 min per side. Remove and set aside.
4. In same skillet, sauté onion 2–3 min. Add garlic and bell pepper. Cook 1 min more.
5. Stir in rice and toast for 1–2 minutes. Add broth and half of the sauce. Stir to combine.
6. Nestle chicken into rice. Cover and simmer on low for 18–20 min.
7. Let sit off heat 5 min. Glaze chicken with remaining sauce. Top with corn and green onions.

- Use chicken breast for leaner option.
- Sub cauliflower rice for lower carbs.
- Tamari can replace soy sauce for gluten-free version.
