These Lemon Lavender Cookies combine bright lemon zest with floral lavender to create an elegant, buttery treat perfect for tea time or special occasions.
Ingredients
For the Cookie Base:
- 2¼ cups all-purpose flour
- 1 cup unsalted butter, softened
- ¾ cup granulated sugar
- ½ cup powdered sugar
- 1 large egg
- 2 tablespoons lemon zest
- 1 tablespoon lemon juice
- 1 tablespoon dried culinary lavender, finely ground
- 1 teaspoon vanilla extract
- ½ teaspoon salt
- ¼ teaspoon baking powder
For the Optional Lemon Glaze:
- 1½ cups powdered sugar
- 3–4 tablespoons lemon juice
- 1 teaspoon lemon zest
- Pinch of ground lavender for garnish
Instructions
1. Grind lavender into coarse powder and preheat oven to 350°F. Line baking sheets with parchment.
2. Cream butter, granulated sugar, and powdered sugar until light and fluffy (3-4 minutes).
3. Add egg, lemon zest, lemon juice, and vanilla extract. Mix until incorporated.
4. In another bowl, whisk flour, ground lavender, salt, and baking powder. Add to wet ingredients and mix until just combined.
5. Wrap dough in plastic and chill for 30 minutes.
6. Roll dough into 1½-inch balls and place 2 inches apart on baking sheet. Bake 12–15 minutes until edges are set.
7. Cool for 5 minutes on sheet, then transfer to rack. Drizzle with glaze if using.
Notes
- Use culinary-grade lavender only, avoid craft lavender.
- Do not skip chilling the dough, this prevents overspreading.
- Let cookies cool completely before glazing for best presentation.
- For a twist, use Meyer lemons for a sweeter citrus flavor.
