Ingredients

- ½ cup heavy cream
- 2 tablespoons unsalted butter, room temperature
- 1 teaspoon pure peppermint extract
- Pinch of sea salt
For the Coating:
- 12 oz dark chocolate, chopped
- 2 tablespoons coconut oil or vegetable shortening
- ¼ cup cocoa powder (optional, for dusting)
- Crushed peppermint candies for garnish (optional)
Instructions
1. Heat heavy cream until simmering and pour over chopped chocolate. Let sit for 2 minutes.
2. Whisk gently from the center outward to create a smooth ganache.
3. Stir in butter, peppermint extract, and salt until fully combined.
4. Cover and refrigerate for at least 2 hours or until firm.
5. Scoop and roll into 1-inch balls. Place on parchment-lined sheet.
6. Melt coating chocolate with coconut oil. Dip each truffle, then return to tray.
7. Optionally dust with cocoa or top with crushed peppermint.
8. Chill to set before serving.
