These St Paddy’s Mint Cheesecake Cups are creamy, minty, and festive no-bake treats perfect for St. Patrick’s Day or any celebration. Made with chocolate cookie crust, smooth mint cheesecake filling, and topped with whipped cream and minty garnish.
Ingredients
Crust:
- 1½ cups chocolate cookie crumbs (like Oreos with filling removed)
- ¼ cup melted butter
- 2 tablespoons granulated sugar
Cheesecake Filling:
- 24 oz cream cheese, softened to room temperature
- ¾ cup powdered sugar
- 1 cup heavy whipping cream
- 1 teaspoon pure vanilla extract
- 1 teaspoon peppermint extract
- 3–4 drops green food coloring
- ¼ cup mini chocolate chips
Topping:
- 1 cup heavy whipping cream
- 2 tablespoons powdered sugar
- Crushed mint candies or chocolate shavings for garnish
Instructions
1. Set up 12 individual serving cups or glasses on a tray that fits in your refrigerator.
2. Combine cookie crumbs, melted butter, and sugar. Press 2 tablespoons into each cup.
3. In a large mixing bowl, whip heavy cream to soft peaks and refrigerate.
4. Beat cream cheese until smooth. Gradually add powdered sugar, vanilla, and peppermint extract.
5. Add green food coloring, then fold in whipped cream and chocolate chips.
6. Spoon the cheesecake mixture into cups, cover, and chill for at least 4 hours.
7. Whip remaining cream with powdered sugar and top each cheesecake cup before serving. Garnish as desired.
