For the Trifle Layers:

  • 2 boxes (3.4 oz each) vanilla instant pudding mix
  • 4 cups cold milk
  • 2 cups heavy whipping cream
  • ¼ cup powdered sugar
  • 1 teaspoon vanilla extract
  • Green food coloring (gel)
  • 1 cup mini chocolate chips
  • ½ cup chopped mint chocolate candies or Andes mints
  • Fresh mint leaves for garnish (optional)

Instructions

1. Preheat oven to 350°F and line an 8×8-inch pan with parchment paper. Prepare brownie batter and bake slightly under the recommended time for fudgy texture. Let cool and cut into 1-inch cubes.

2. Whisk pudding mix with cold milk for 2 minutes. Let it set for 5 minutes. Tint half of the pudding with green food coloring.

3. In a chilled bowl, whip heavy cream with powdered sugar and vanilla until soft peaks form.

4. Layer brownies at the bottom of your trifle dish or glasses. Add vanilla pudding, whipped cream, and sprinkle mini chocolate chips.

5. Repeat layers with green pudding, more whipped cream, and brownies.

6. Top with remaining whipped cream, mint candies, and mint leaves.

7. Chill for 3–4 hours before serving.
