Description
Steak with Green Sauce and Mashed Sweet Potatoes features perfectly seared steak topped with a vibrant herb sauce and served alongside creamy, buttery sweet potatoes.
Ingredients
- 4 ribeye or New York strip steaks (8 oz each)
- 2 tablespoons olive oil
- 1 teaspoon kosher salt
- 1/2 teaspoon black pepper
- 2 tablespoons unsalted butter
- 3 garlic cloves, smashed
- 1 cup fresh parsley leaves
- 1/2 cup fresh cilantro leaves
- 1/4 cup fresh chives, chopped
- 2 garlic cloves, minced
- 1/4 cup extra virgin olive oil
- 2 tablespoons red wine vinegar
- 1 tablespoon capers, drained
- 1/2 teaspoon salt
- 1/4 teaspoon red pepper flakes
- 3 pounds sweet potatoes, peeled and cubed
- 4 tablespoons unsalted butter
- 1/4 cup heavy cream
- 1 teaspoon salt
- 1/2 teaspoon white pepper
- 2 tablespoons maple syrup (optional)
Instructions
1. Place cubed sweet potatoes in a pot of cold salted water and bring to a boil. Cook 15–20 minutes until fork-tender.
2. Blend parsley, cilantro, chives, garlic, olive oil, vinegar, capers, salt, and red pepper flakes to make the green sauce. Pulse until textured but not fully smooth.
3. Pat steaks dry and season with salt and pepper. Let rest 10 minutes at room temperature.
4. Heat olive oil in a cast-iron skillet over medium-high heat. Sear steaks 3–4 minutes per side for medium-rare.
5. Add butter and smashed garlic during the last minute and baste steaks with foaming butter.
6. Transfer steaks to a board and rest 5 minutes.
7. Drain sweet potatoes and mash with butter, cream, salt, white pepper, and maple syrup until smooth.
8. Slice steak against the grain and serve with mashed sweet potatoes and green sauce spooned over top.
Notes
- Use a meat thermometer and aim for 130°F for medium-rare before resting.
- Do not over-mash sweet potatoes to prevent gluey texture.
- Prepare green sauce within 2 hours of serving for best color and flavor.
